Ingredients

  • Gram flour [Kadalai maavu, besan] – 2 cups
  • Sugar – 2 cups
  • Water – 1 cup
  • Ghee – 4 tbsp
  • Cloves – 4
  • Green cardamom powder – ½ tbsp
  • Cashews – 5
  • Raisins – 8
  • Turmeric powder - 1/4 tsp
  • Salt a pinch
  • Water as needed
  • Oil or ghee for deep frying

Preparation

  • Heat ghee in a pan roast cashew nuts & raisins then chop & keep it aside.
  • Sieve gram flour.
  • Now take the gram flour in a bowl, add pinch of salt, turmeric powder mix well
  • Then add water to make it flowing consistency (Not too much watery)
  • Heat enough oil in a pan then pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
  • Deep fry both on medium heat.
  • Once its ready take it out & drain on absorbent paper.
  • Transfer boondis to a bowl & cover with lid.
  • Then fry another set of boondis then transfer to a bowl.
  • Heat water & sugar (1: ½) in a pan let it boil till half string consistency or one string consistency [arai kambi padham / ilam kambi padam] then cut off heat.
  • Once its ready add two tbsp of ghee to avoid crystallization.
  • Add green cardamom powder.
  • Add fried boondi, raisins, cashew nuts, & clovesin to the warm sugar syrup & gently mix.
  • Leave it for a min then again gently mix (So that the boondhi absorb the sugar syrup completely)
  • Then take one handful of mixture and make a ball shaped Ladoos in warm stage
  • Then let it cool & store it in an airtight container use within 5 days

Tip

  • You can add nutmeg scraps and kalkandu for another variation
