Zucchini pasta | Fusilli masala pasta with zucchini and broccoli-indian style

Ingredients

  • Mini Fusilli Pasta [Durum wheat pasta, Borges] – 1 cup
  • Zucchini– ½ cup [Yellow, cut into cubes]
  • Broccoli– ½ cup [fresh]
  • Garlic – 2 [mashed or finely chopped]
  • Green Chilli – 1 [slit]
  • Black pepper – ½ tbsp [crushed or freshly ground]
  • Garam masala – ½ tbsp [optional]
  • Pasta seasoning – 1 tbsp
  • Tomato Sauce - 4 tbsp
  • Coriander Leaves - 2 tbsp [finely chopped]
  • Oil - 2 tbsp
  • Salt to taste
  • Water as needed

Preparation

  • In a pressure cooker add enough water & salt let it boil then add Fusilli Pasta, cover lid cook for 3 whistles then drain water.
  • In a pan add water & salt & let it boil.
  • Add Broccoli leave it for a min then drain water & put it in a cold water.
  • Heat oil in a pan add garlic & green chilli sauté.
  • Then add Zucchini, Broccoli sauté well.
  • Add salt, pasta seasoning & garam masala sauté.
  • Add tomato sauce mix well.
  • Add cooked pasta, salt mix well & cook for 2 min then cut off heat.
  • Finally add coriander leaves & freshly ground pepper mix well.
  • Cut off heat & serve hot
