Ingredients

  • Cashew nut[kaju, munthiri] – 1 cup
  • Sugar - ½ to 3/4 cup
  • Water - ¼ cup
  • Ghee - 1 tbsp
  • Saffron – ¼ tsp

Method

  • In a mixie jar add cashews finely grind.
  • Heat pan add sugar & water let it melt.Then cook till one/two string consistency or soft ball consistency.
  • Then add ground cashew powder, mix well without lumps on low flame.
  • Add ghee and stir continuously.
  • Once the mixture start leaving the pan or blend well cut off heat.
  • Transfer this to ghee greased tray let it cool for 5 min.
  • Then knead the dough
  • Place dough on the butter paper, roll over the chapathi roller and flatten.
  • Then cut into diamond shape, garnish with saffron.
  • Put this in an airtight container. Use it for 3 days

Note

  • Sugar consistency is important.
  • Dont grind cashews for long time because cashews release oil and turns sticky.
  • You can sieve cashew powder after grinding.
